Sweet Potato and French Lentil Stew:
1 Tbsp Canola or Olive Oil
1 Large Yellow Onion, finely diced
4 Ribs Celery, finely diced
4 carrots, chopped
1 Red Pepper, finely diced
2 Large Sweet Potatos, cut into ¼" cubes
2 Tbsp Fresh Minced Garlic
1 Tbsp Cumin
1 Tbsp Kosher Salt
1 Tbsp Fresh Ground Black Pepper
1 tsp Onion Powder
1 tsp Oregano
1 tsp Cayenne Pepper- or more to taste
1 cup French Lentils
½ cup Quinoa
6 cups Vegetable Stock
-Mix well in crockpot and cook on Medium for at least 6 hours. I prefer to cook on Low overnight, the longer cooking time gives the flavors more time to mesh together.
